Land Institute’s Newest Project
The Land Institute, based in Salina, Kansas, has been developing perennial wheat and sustainable farming practices for years. Now they are developing a pulse or legume for human consumption, calling it Baki-Bean™. The original crop, known as sainfoin, has been used as forage for animals for centuries.
The Land Institute believes this crop can be developed as a legume for human consumption that will be very close to soybeans in nutritional value. The crop also draws nitrogen from the atmosphere and stores it in the soil, and it is drought resistant. The flowers of the plant are home to pollinators, especially bees – providing a second crop of honey. The FDA process for food safety is underway as are continued variety and yield studies (non-GMO).
